开普敦中国国际学校以中文课程教学为主。目前提供小学一至七年级，初中年级（8-9年级），高中年级 （10-11年级），高中毕业班（12年级）的中文课程。

目前使用教材主要以国侨办与暨南大学合作开发的《中文》（修订版）为主。教材1-12册；练习册A 1-12册；练习册B 1-12册；教师用书1-12册。以及部编版《语文》小学教材。辅助教材有：《拼音》《幼儿汉语》，剑桥国际Chinese IGCSE, AS-Level 和A-Level的相关辅导教材。

根据南非基础教育部颁布的中文作为外语科目课程大纲（Second additional langauge subject），小学一周2个教学课时，初中，高中4个教学课时，包括基础中文知识、阅读、写作、个人展示、口语，语言综合能力等。

教学以《开普敦中国国际学校中文课程标准》为主要标准及导向，包括五个部分：前言、课程理念、课程总目标、课程架构和分项目标。前言部分介绍了中文课程标准的背景和目的; 课程理念提出了制定中文课程所遵循的教学理念；课程总目标提出了中文课程的教学总目标; 课程架构具体说明中文课程的设计思路、各个课程的学习重点等; 分项目标提出了小学中文课程的分项目标。

八至十一年级（初高中部分）每年有四次学期考试，十二年级高考班三次，考试成绩按照基础教育部要求发送学生所在的当地学校存入学生档案。其他年级两次学期考试 （六月及十一月）。考试成绩均记录在案，并存入学生档案，以备学生查询及转学之用。高中毕业班学生可以根据自身情况选择中文科目替代第二外语 （第七门），或者选择中文科目作为第八门课程。剑桥系统的学生可以根据学习的科目选择中文科目（IGCSE，A/AS Level) 。针对有高考需求的学生，我们同时提供剑桥国际Chinese IGCSE, AS-Level，A-Level和基础教育部中文科目（Second Additional Language）两种完整考试的准备材料。

​中文学校每年年初入学，校历与西开普省教育局公立学校校历同步。申请入学需要进行必要的入学评估考试。
